Hemp in pesto ?

Pesto salmon dish is built around Kuusamon Juusto Mustaleima Emmental. The strong flavor of Emmental matches well with pesto, plus it’s a domestic product to replace parmesan for example. Delicious food made up from pure domestic ingredients!  Cinematography Mika Hirvonen.


  • 1 big salmon or 1 salmon fillet
  • 2 shrubs of basil
  • 2 shrubs of parsley
  • 1 lemon
  • 2 garlic cloves
  • 2,5 dl canola oil or quality olive oil
  • 2 dl domestic hemp seeds
  • ½ Kuusamon Juusto Mustaleima cheese
  • salt


  1. Cut ½ cheese into smaller pieces and place inside blender.
  2. Add parsley, basil, crushed garlics and canola/olive oil inside blender.
  3. Mix ingredients in blender.
  4. Add hemp seeds and squeeze lemon juice inside the blender, add some salt.
  5. Mix until the mass is smooth but still has texture.
  1. Fillet the salmon, remove the skin and bones.
  2. Cut decent sized pieces from salmon.
  3. Heat up the pan and gradually fry the pieces first from the other side for 2 minutes, add salt.
  4. Turn the pieces and fry also from the other side. Don’t overcook!
  5. Place cooked salmon fillet on plate and add some pesto on top of the fillet, finish the dish with hempseeds.
