How to prepare restaurant quality pizza at home?

Restaurant quality pizza at home requires a very hot oven, high quality ingredients and long risen Neapolitan pizza dough. In collaboration with Ooni Pizzaoven we brought a small piece of Naples to Lapland!

INGREDIENTS

Pizza crust
  • 750 g 00 pizza flour
  • 450 g water
  • 25 g yeast
  • 24g sea salt
Tomato sauce
  • 1 can of tomatoes
  • 1dl tomato pyrée
  • 2 tbsp olive oil
  • 2 dl pineapple juice
  • 2 garlic cloves
  • salt and pepper
  • fresh basil
Pizza toppings
  • 500 g high quality grated mozzarella
  • 1 buffalomozzarella
  • 200 g mini tomatoes
  • 2 dl Kalamata olives

RECIPE

Neapolitan pizza dough
  1. Pour water and half of the yeast to a mixer and let ingredients mix for a while
  2. Add half of the flour to the mixer and let mix.
  3. Add rest of the flour and salt, let mix for 15 minutes so that the dough develops viscosity.
  4. Place the dough into a container with lid on and place the container somewhere 21°C to rise for 24h.
  5.  NEXT DAY: Heat up the oven to maximum °C and place pizza stone inside the oven if you have one.
Tomato sauce
  1. Pour whole tomatoes into a bowl and crush tomatoes with a fork until it is smooth.
  2. Crush garlic clove and basil, add to the tomato sauce.
  3. Add pineapple juice, olive oil, salt and pepper and mix.
Pizza toppings
  1. Slice the Kalamata olives and mini tomatoes in half.
  2. Cut buffalo mozzarella into thin slices.
Pizza crust
  1. Spread flour on to clean table and shape round balls from pizza dough.
  2. Start shaping the balls by working your way from the middle to the edges.
  3. Makes sure to have enough flours under the dough to prevent tearing and so that the crust moves nicely on the surface.
  4. Place the crust on baking paper and on a baking tray or pizza stone.
  5. Start assembling the pizza by adding tomato sauce first, next grated cheese and buffalo mozzarella, next mini tomatoes the cutting surface upward,  then olives.
  6. Cook the pizza in the oven for 4-5 minutes.
  7. Finish the pizza with basil and Italian olive oil.
