Trendy ketopizza with smoked reindeer!

INGREDIENTS
Ketopizza crust
- 1 package of Kuusamon Juusto Savujuusto or Savujuusto Gouda
- 1 package of Kuusamon Juusto Savujuusto Emmental
- 1 package of Kuusamon Juusto Savujuusto Mustaleima
- 150 g almond flour
- 2 eggs
- olive oil
Pizza sauce
- 1 can of whole tomatoes
- 1 garlic clove
- 1 dl fresh basil
- 2 tbsp quality olive oil
- salt and pepper
Pizza toppings
- cold smoked reindeer cuts
- cold smoked salmon cuts
- caviart
RECIPE
Pizza crust
- Heat up the oven to 250 °C and choose the middle level.
- Halve Mustaleima and Savujuusto, grate other halves and cut other halves into cubes.
- Melt cheese cubes in a pot or in microwave until it becomes a smooth mass.
- Add half of the almond flour and 1 egg to the cheese mass and mix.
- Add rest of the almond flour and other egg and mix.
- Pour half of the mass on to baking tray that is covered with baking paper, place another baking paper on top of the cheese and roll the cheese with a rolling pin until crust becomes thin.
- Repeat phase 6. with the other half.
- Remove the topmost baking paper and bake the crust in the middle level for 10 minutes.
Pizza sauce
- Pour whole tomatoes into a bowl and crush tomatoes with a fork until it is smooth.
- Crush garlic clove and basil, add to the tomato sauce.
- Add olive oil, salt and pepper and mix.
Assembly of cold smoked salmon pizza
- Spread tomato sauce, cheese and cold smoked salmon in this order on top of the freshly baked crust.
- Bake pizza in the oven so that the cheese melts.
- Finish the dish with caviart and fresh dill.
