Trendy ketopizza with smoked reindeer!

Let’s cook a trendy ketopizza from Kuusamon Juusto products! Cinematography Mika Hirvonen.

INGREDIENTS

Ketopizza crust
  • 1 package of Kuusamon Juusto Savujuusto or Savujuusto Gouda
  • 1 package of Kuusamon Juusto Savujuusto Emmental
  • 1 package of Kuusamon Juusto Savujuusto Mustaleima
  • 150 g almond flour
  • 2 eggs
  • olive oil
Pizza sauce
  • 1 can of whole tomatoes
  • 1 garlic clove
  • 1 dl fresh basil
  • 2 tbsp quality olive oil
  • salt and pepper
Pizza toppings
  • cold smoked reindeer cuts
  • cold smoked salmon cuts
  • caviart

RECIPE

Pizza crust
  1. Heat up the oven to 250 °C and choose the middle level.
  2. Halve Mustaleima and Savujuusto, grate other halves and cut other halves into cubes.
  3. Melt cheese cubes in a pot or in microwave until it becomes a smooth mass.
  4. Add half of the almond flour and 1 egg to the cheese mass and mix.
  5. Add rest of the almond flour and other egg and mix.
  6. Pour half of the mass on to baking tray that is covered with baking paper, place another baking paper on top of the cheese and roll the cheese with a rolling pin until crust becomes thin.
  7. Repeat phase 6. with the other half.
  8. Remove the topmost baking paper and bake the crust in the middle level for 10 minutes.
Pizza sauce
  1. Pour whole tomatoes into a bowl and crush tomatoes with a fork until it is smooth.
  2. Crush garlic clove and basil,  add to the tomato sauce.
  3. Add olive oil, salt and pepper and mix.
Assembly of cold smoked salmon pizza
  1. Spread tomato sauce, cheese and cold smoked salmon in this order on top of the freshly baked crust.
  2. Bake pizza in the oven so that the cheese melts.
  3. Finish the dish with caviart and fresh dill.
